Life is busy. Between work, home, family, and everything in between, finding time to cook something nourishing can feel like a challenge. But when I need a no-fuss meal that feels indulgent, tastes incredible, and is packed full of goodness, this Creamy Tuscan Chicken is one of my go-to recipes.


It’s rich, comforting, and satisfying, yet requires very little effort - because let’s be honest, some days you just need something delicious but simple without spending hours in the kitchen.

Ingredients (Serves 4):


  • 4 Chicken breasts

  • 1/3 jar of sun-dried tomatoes

  • A small bag of fresh spinach

  • 250ml double cream

  • 100ml vegetable stock (or chicken stock cube & water)

  • 1 onion, finely chopped

  • 2 cloves garlic, minced

  • Olive oil


Instructions:

  1. Cook the chicken: Heat a little olive oil in a wok and cook the chicken breasts for 4 minutes per side until golden brown. Remove and set aside.

  2. Sauté the flavours: In the same pan, cook the onion, garlic, and sun-dried tomatoes until soft and fragrant.

  3. Create the creamy base: Prepare your stock in a cup, stir until fully dissolved, then pour into the pan. Add double cream and mix well. Let it simmer on medium heat for 5 minutes, stirring frequently.

  4. Add the chicken: Nestle the chicken breasts back into the pan and baste them in the creamy sauce.

  5. Trust the process with spinach: Add the spinach - it may look like too much, but trust me, it will wilt perfectly into the sauce. Simmer for 10 minutes, basting the chicken regularly to soak in the flavours.

This dish is incredible over boiled rice for a slightly risotto-like texture or with fluffy mashed potatoes for extra indulgence.
