This quick and easy recipe is a guaranteed family favourite, perfect for busy weeknights. Packed with nutrients and bursting with flavour, this roast will satisfy your taste buds and keep you on track with your healthy eating goals.

Ingredients:
- 2 medium-sized carrots, sliced (can be frozen)
- 1 medium-sized onion, diced (can be frozen)
- 1 kg beef joint
- 2 tbsp oil
- Salt & pepper
- 500ml beef stock (enough to mostly cover the beef)
- 3 tbsp tomato puree
- A dash of Worcestershire sauce
- Beef gravy granules for thickening
Instructions:
1. Prepare the Vegetables:
- Add the sliced carrots and diced onion to the slow cooker.
2. Prepare and Sear the Beef:
- Rub oil all over the beef joint and season generously with salt and pepper.
- Sear the beef on all sides in a hot pan (approximately 15 seconds per side) to seal in the flavour.
3. Transfer to Slow Cooker:
- Once the beef is seared, transfer it to the slow cooker with the vegetables.
- Pour in the beef stock so that it covers most of the beef.
- Add the tomato puree and a dash of Worcestershire sauce.
4. Cook:
- Set the slow cooker to high and cook for 3 hours per kg, or on low for 5 hours per kg. Adjust the timings if your beef joint is larger.
5. Rest the Beef:
- Once cooked, remove the beef from the slow cooker, cover it in tin foil to keep warm, and let it stand for 15-20 minutes.
6. Prepare the Gravy:
- With the remaining liquid in the slow cooker, add some beef gravy granules to thicken it to your desired consistency.
7. Serve:
- Finely slice the beef and pour over the rich, dreamy gravy. Enjoy!
